The food to be tumbled is placed in the drum of the machine along with a liquid solution, and then the air is removed by drawing a vacuum. When the drum rotates, (for times ranging from a few minutes to a few hours, depending on the food product), the food generally switches between the different pressure environments of liquid and vacuum atmospheres.
The food expands in the vacuum, exposing more of the tissue and cells of the food to facilitate deep cleansing by the liquid as well as thorough and uniform distribution of any desired marinade flavoring.

The company wanted to add a vacuum tumbler to their product line for smaller processors.
